Black Bear Bread Company recently opened in Grayton Beach and is one of the Nathan Abbott Team’s new favorite local eateries. Our friend Phil McDonald and his business partner Dave Rauschkolb introduced their neighborhood bakery, coffee shop and all-day seasonal café to Grayton Beach on August 21st, 2017. Freshly-baked naturally leavened bread, dynamically seasonal produce and sensible sourcing are the inspiration for the menu serving  breakfast and lunch.

“Winter 2016 we started experimenting with a bread culture (starter) at Bud & Alley’s Pizza Bar and began making our sourdough in a rudimentary oven. With practice, we started getting decent results. Initially, we were only baking bread for Bud & Alley’s Restaurant Group, but we officially debuted our breads to the public at the Seaside Farmers Market in May 2016. The response was immediate and overwhelmingly positive!” said Phil McDonald. All of their breads are naturally leavened, made from starter instead of commercial yeast. You can find a variety of fresh baked goodies including bread, pastries, breakfast sandwiches and tartines (a French open faced sandwich).

Another unique treat you can find at Black Bear Bread Co. is a variety of Stumptown Coffee Roasters blends. Some of the best establishments around the world serve Stumptown coffee that is sourced from high quality coffee plants and roasted just enough to bring out the best of what’s inherent in each particular bean.

Black Bear Bread Co. is named after the black bears that frequent the area behind the kitchen and many other places in Grayton Beach and Santa Rosa Beach. When they were testing sourdough starters early on, they soon discovered a bear was climbing into the dumpster and eating the starter! They thought it was the perfect name for the bakery and would pay homage to their furry neighbors that share appreciation for great sourdough.
